I pickled peppers from memory as my father used. It was not what I do wrong?
I was trying to duplicate my Dad's recipe memory. The recipe is a slightly sweet pickling recipe using hot banana peppers. One cup of water, a cup of cider vinegar, 1 / 2 cup sugar white, a teaspoon of salt (I used kosher), two full tbs.of pickling spices. Boil while naked. Pack washed divided and seeded peppers into sterile containers. Pour mixture over top while still hot and seal. Dad was always crisp. Mine tasted good but were very soft. What did I do wrong?
Alum or "fresh pickle 'will maintain its crunchy pickled peppers. Pickling preserves a few days before helps. Use distilled water and make sure your peppers are fresh and crisp, before canning.
